Alexandru Simon, born in France and raised surrounded by everyday farm life in Romania, was influenced by the rich culinary traditions of his homeland. As a result, he knows the journey of every single ingredient from the garden to the table. This cultural diversity is reflected in his dishes. His love of authenticity and passion for French cuisine have inspired him to refine traditional dishes into modern culinary wonders. His culinary philosophy is based on using high-quality seasonal ingredients and striving for a balanced combination of flavors, textures, and visual presentation.
